1 medium zucchini, grated
1 clove of garlic, minced
Squeeze of lemon juice
Teensy pinch sea salt
Chilli flakes (optional)
1/2 cup of cashews
Don’t be afraid to cook fish. I just do 3 minutes or so in a pan on a medium to high heat to seal one side and then the other side for 1-2 minutes. That way it’s just cooked through.
Spray pan with a little olive oil. Add in garlic then toss in zucchini and carrot until just warmed through. Squeeze lemon juice over the top and season. Transfer to plate.
Place cooked salmon fillet on top and add a dollop of tzatziki*
*Tsatsiki ingredients: Biodynamic Paris Creek low fat Yoghurt, minced garlic to preferred garlic hit (hehe) and diced cucumber
